Easter in the Sandhills

I meal planned for last week before I remembered it was Easter and I was also going to a cow/calf symposium. I spent Tuesday & Wednesday in Columbus, NE at the symposium. I learned a lot which is good as Nick wants to ranch. Friday we drove around in the sandhills of Nebraska. It’s so pretty there. My grandparents had a small farm North of Comstock that I used to spend summers at. We drove to their grave for a visit and past the old farm. We stopped at my cousin Jennifer’s ranch near Brewster. It was great to see her family for a bit. We spent Saturday driving around the Platte basin and visiting my Grandma Merrier, Dad, and Aunt Pam. What fun! Sunday we spent Easter with my siblings! It was great time with lots of unhealthy eats.

Overall: Good. All the tomato upset my stomach. If I make this recipe again, I’ll cut the canned tomatoes in half.

Price: Good. Not much to it. The sugar free bacon was the most expensive ingredient.

Overall: Eh. I’m not a huge fish fan. That said, this recipe was good. My zucchini went limp due to my poor holiday planning, so I improvised with broccoli. I also added paprika for a bit more flavor

Price: Good. Very few ingredients, so that was nice.

Last week was rather uneventful. It dragged on and on but really nothing happened.

Overall: I love this chili. Unfortunately for me, I didn’t plan well and was out of ONION! WTF! Sad! It was still good but not up to it’s normal amazingness.

Cost: Good. I typically leave out the bacon. It’s good with the bacon, but the seasoning and smoked paprika are really what seal the deal for me.

Overall: Eh. I don’t plan on making this again. The chicken fingers were dry and the almond breading was dry. The ranch was ok. I think it could be better with buttermilk instead of coconut milk.

Cost: Reasonable

Valentine’s Day Fun!

Valentine’s Day Fun!

I thought it took a while to get over my Superbowl food hangover… but Valentine’s much worse. It all started with 3 dozen beautiful red and pink roses from Nick delivered while I was at work. (awww….how sweet is he!) My oldest sister and her family were in town, so we joined them for supper at Red Robin (Yum!) and then Nick and I went to see Deadpool! It’s hilarious! Go see it!

Saturday, Nick took myself and 2 of my nieces to the Backstage Experience at the Zoo in the aquarium! How cool! We got to see the big filters and everything under the aquarium that supports the animals. We also got to see the coral they are growing for other zoos and to return to the ocean! From there we went to the 3rd floor which is the top of the aquarium! We saw them feed the sharks and turtles. It was really cool to watch! That evening we had Cheddar’s which I also love. Nick had also gotten me some cookies from Eileen’s, which are my favorite.

Sunday, Nick took me to 801 Chophouse which is a super fancy steakhouse in downtown Omaha. I’ve been there once before and it’s so delicious! Yum! Steak!

So my gut was upset after the crazy weekend with lots of sugars and grains. I’ve been fighting it all week to get it back to normal. On to the food!!

Overall: Delicious! I could eat this weekly. I top with mozzarella cheese!

Prep Time: As with any spaghetti squash recipes, it takes time because you have to first cook the spaghetti squash. Once it’s cooked, you mix everything together and then bake for another hour. So it does take some time to make but it’s delicious and worth it.

Cost: Reasonable!

Chicken Salad on Almond Bread

Salad Ingredients: 14oz chicken, 3 stalks celery, 1/4 onion, 4tbsp mayo (I used Primal Kitchen Avo Mayo). Cook chicken and chop veggies. Mix them all up with mayo.

Bread Ingredients: 3/4cup almond butter, 4 large eggs, 1/4cup almond flour, 1/4cup arrowroot powder, 1/2tsp sea salt, 1/2tsp baking soda, 1tbsp ground flax or chia. Preheat oven to 350. Blend eggs and almond butter and mix dry ingredients separately. Then mix everything together and put into bread pan. Bake for 40-45 minutes until toothpick comes out clean.

Overall: Good but the bread was a little dry for my taste. I think I’ll try a different bread recipe next time, but the chicken salad was delicious! It was also super easy to make.

Cost: Very reasonable!

Superbowl Hangover

Superbowl Hangover

Is it just me or does it seem like this week is dragging on and on and on… Maybe it’s just me. I’m really excited to see my sister and her family on Friday and Saturday. I’m also super excited to celebrate my first Valentine’s Day with Nick (not to mention my first Valentine’s day where I was in a relationship for probably 9-10 years…).

Nick wanted wings and pizza for the Superbowl. I feel I did good and stuck to 8 wings and only 2 slices of pizza! Impressive for me! I was mainly worried I’d feel like poo if I overindulged, so I tried to keep myself in check. I also tried king cake for the first time ever at work on Fat Tuesday. Yum! What a delicious cinnamon roll!

On to the meals!

Overall: Yum. I can’t get enough of this stuff. It’s just so good.

Cost: Extremely reasonable!

Goulash – reinvented paleo!

1 lb ground beef, 1 spaghetti squash, 1 can diced tomatoes, 1 can tomato paste (I used sauce and it was too runny), 2 tbsp chili powder, 1 tbsp garlic powder (or less…I love garlic).

Prepare spaghetti squash as normal and shred. Brown beef, once browned, add tomatoes and spices, then mix in spaghetti squash

Overall: Yum! Not quire the same without noodles… but still wonderful! And still super easy to make!

Cost: Very reasonable!

I also had protein pancakes for supper tonight. Yum Yum!! I just started using Garden of Life Grain Free Vanilla protein. It made excellent pancakes.1 scoop of powder, 2 eggs, mix well and cook. I topped with almond butter and maple syrup… with a side of bacon!! And a huge glass of milk (it expired days ago but wasn’t bad. It needed to be drunk).

Hello February!

Hello February!

Well, the first week of February has come and gone. We had a huge snow storm here in Nebraska. Luckily, Omaha wasn’t hit too bad! Phew! I’m tired of shoveling snow…

Friday night I went to Happy Hour for my monthly female friends meet up. It was great seeing them all again and getting to know the ladies I’m not friends with better. It’s a great group of women! Then, I worked on this sweet gift for my boyfriend. I really hope he likes it. It was inexpensive but definitely a lot of thought on my part went into it (with love of course).

This week’s recipes were pretty good. Much better than last week’s flops. Ended up throwing out 3 servings of the chicken chili….I just couldn’t make myself eat it. I tried. I just couldn’t do it. 😦

Sweet Potato Sloppy Joes from Paleo Newbie. <I’ve figured out how to hyperlink! Yay!

Overall: This recipe was good. However, it made me crave bread. I guess Sloppy Joe’s on bread are engrained on my brain! Add that to the fact that the only sweet potatoes at Natural Grocers this week were gigantic. The sweet potato to Joe ratio was way too high. Less potato, more Slop needed.

Cost: Very reasonable. 🙂

Ease: Super easy and fast to make. Cooking the sweet potatoes took the longest.

Slow Cooker Paleo Chicken Teriyaki also from Paleo Newbie.

Overall: Yum! I paired it with rice and broccoli. I recommend adding in the pepper flakes. I forgot them and it was slightly on the bland side without them.

Cost: Reasonable 🙂

Ease: Super easy, mix everything and throw the chicken on top to cook for hours. Shred up the chicken and throw it back in for a bit. Wa-la! Done!

Up for next week:

Goulash – No recipe known… I’ll be winging it! If it turns out delicious, I’ll share! I’m going to attempt to replace the noodles with spaghetti squash. I’ll measure out my ingredients as I go so I can post.

Japanese Hot Pot Soup – from the 21-Day Superhero challenge! Yummy! I can’t wait to make this again! I didn’t add the sesame sauce last time. Maybe I’ll get crazy and try it?

SuperHero Challenge Recipe:

  • 1 box bone broth, chicken broth, orbeef broth
  • 2 tablespoons sesame seeds (optional)
  • 1-2 tsps ground ginger (can also use fresh ginger, but remove after cooking)
  • 1-2 tsps ground turmeric
  • 2-3 cups mushrooms of choice, diced
  • 2 stalks green onions, diced
  • ½ head of cabbage, diced finely
  • ¼ red onion
  • salt and pepper to taste

Bring to almost a boil and let simmer all together in a giant pot. Add in your choice of meat, 1 pound total (I like a cheap steak.)

Makes 3 servings. Add diced avocado on top OR homemade sesame sauce:

Sesame sauce:

  • 3 tablespoons tahini
  • 3 tablespoons sesame seeds
  • 1 tsp apple cider vinegar
  • 1 tablespoon coconut aminos
  • 1 tablespoon sesame seed oil

Week 3 Superhero Challenge

Week 3 Superhero Challenge

Last week was the final week of my 2nd superhero challenge. While none of Emily’s meals looked very good, I did try one.

Jalapeño popper chicken chili

Overall –

I was super excited about this chili because it’s from one of my favorite paleo recipe websites! Let’s just say, eh. I wasn’t thrilled with this recipe. The ground chicken texture leaves much to be desired. I can barely choke it down…. but it was also so expensive to make. The only ground chicken I was able to find was $7/lb! Holy crap! Add on top of that a pound of ground beef, and it makes for a rather expensive chili that I won’t be making again.

Prep –

Super easy. Chop everything up and thrown it all in the crockpot and mix. Cook on low for 8+hours. Easy peasy.

Cost –

Expensive in my opinion. $7/lb for ground turkey, $5/lb for ground beef. Yikes! That’s a lot for only 6 servings.

Chicken Carbonara Casserole

Overall –

Yum. I’ve made this recipe before and it’s good. Even my boyfriend thought it was good despite the fact that it was “too healthy”. I’ve made myself a note to cut the amount of nutmeg. I don’t know like it…I don’t know why I always use it when the recipe calls for it…

Prep –

A little more complicated as there are lots of small steps. Cook the bacon, cook the spaghetti squash, cook the chicken, dice up all the veggies. Then mix them all together and bake for an hour. Luckily that baking hour gives you tons of time to clean all the dishes you just dirtied making it…

Cost –

Expensive if you use the Pederson’s sugar free bacon and good quality chicken. It would be much cheaper if you weren’t worried about the sugar free bacon or quality chicken.
