Here we are in a New Year. I have decided enough is enough. I need to cut sugar again.
Here is what I’m eating this week!!
Smoky Bacon Chili – see linked recipe from PaleOMG
Avocado chicken salad – see linked recipe from Natasha’s Kitchen
Taco salad – Saute ½ onion in healthy oil (EVOO, coconut, avocado oil) until translucent. Add 1 lb beef, 1 tsp cumin, 1 tsp paprika, pinch of cayenne, ½ tsp salt, and pepper to flavor. Saute cauliflower rice (or 1 bag frozen or 1/2 head fresh) and sprinkle with salt & pepper (If using frozen or whole cauliflower, pulse in food processor until rice sized, then follow saute instructions). Top 2 handfuls of mixed greens with beef mixture (split in 3 servings), cauliflower (split in 3 servings), ½ avocado, and salsa (sugar free).
Wish me luck!! I will be completing another round of the EmFit Challenge and it’s my resolution to stay sugar free a minimum of 4 days a week after this 21 days is complete!
