The last 2 weeks, I’ve really fallen off the train. Last week was crazy! I had something to do every evening: supper and swimming with out of town friends, flute choir rehearsal, a visit from my sister and her 3 kids, a zoo trip with that sister + kids and my other sister plus her 3 kids (6 kids total… we had a great time!), Lasik , a birthday party, and helping my boyfriend move equipment. Stressful and tiring and no time to cook. My choices weren’t great but most days they also weren’t terrible.
This week, I’ve just felt lazy and unmotivated. I’ve been nursing my eyes and being sure to frequently apply drops to keep them hydrated. I already feel like Lasik was one of the best decisions I’ve made. Sure, it’s annoying now with all the drops, but that’ll improve with time!
I didn’t have time to plan last week, so I failed this week… kind of. Several meals of chicken, rice, and broccoli have gotten me though the week. Oh well, next week is a new week! Another chance to start again! I got my first issue of Paleo Magazine today! Thankful for the much needed motivation it’s given me!

Tuna Casserole from The Domestic Man
Overall: Yummy!! It definitely isn’t the pasta loaded goodness you’re used to but it was so good. I used coconut milk instead of the heavy cream. I think next time I’ll try cream. I don’t mind coconut milk, but there was a slight coconut after taste that I’m not a fan of (I don’t like coconut…. but I put coconut oil in everything… so go figure…)
Turnip and Potato Soup from The Domestic Man
Overall: Another yum!! I don’t think I’ve ever eaten a turnip until I made this soup. It was delightful. Almost like eating mashed potatoes for a meal! The only thing I would change would be to add some meat to it. Perhaps ham or bacon? BACON!!
